Ales are the oldest beers, produced through « top » fermentation, carried out with the yeast "Saccharomyces cerevisiae", which acts at the surface of the wort and develops at relatively warm temperatures, between 15 and 25 °C. This mode of fermentation encourages the production of complex, fruity and spicy aromas, giving ales a richness of flavour that is readily associated with medieval and modern brewing traditions. Before the invention of refrigeration in the 19th century, all beers were necessarily Ales, as brewers did not have the cold, stable conditions required for other fermentation methods.
The Oatmeal Stout is a black beer characterised by the addition of malted or unmalted oats, which gives it a smooth, silky texture as well as a rich and creamy mouthfeel. This stout combines the roasted malt notes typical of stouts, such as coffee, chocolate and caramel, with a subtle sweetness and a roundness provided by the oats.
The body of the Oatmeal Stout is generally medium to full, and the oats also contribute to a slight nutty or grainy flavour that enriches the taste profile. Hop bitterness is moderate to low, present enough to balance the malty flavours without dominating them.
In addition to its velvety texture, the Oatmeal Stout is distinguished by a smooth finish, often slightly sweet, which makes it a comforting and easy-to-drink beer. This style is appreciated for its balance between the richness of the roasted flavours and the creamy sweetness of the oats, which makes it a particularly pleasant beer to enjoy, especially in cool weather.
